If you don't, you must learn a few things about :

1) How to make ice-cream in a professional way.

2) How to sell; little marketing, a few things about business, about prices.

So, let's go.

1)To make ice cream in a professional way it's different like to make ice cream home. When you make it home, you can forgot something, you can put approximatively "250 grams of sugar"....But professional, you must have the same taste everyday. 

You must have professional things, because you make for other people, you must have an area where you prepare, an area where you deposit, a special way to deliver from laboratory to the point of selling. Everything must be perfect, and because you want a business in ice cream, everything is little difficult for you now...You need to make all of this in special time, all in chronometer.

The ice cream. Two kind: with water and with milk. You need 2 equipment to make: 1 pasteurization and 1 freezer. I don't know how much ice cream you think you will sell, so I cannot recommend you what kind or type. Maybe class 60 s. This means 1 pasteurization with 60 liter and 1 freezer with capacity 6 liter at every 15 minutes. 

The pasteurization can take your "mix" from 4 grade Celsius to 95 grade Celsius in about 90 minutes, and after take down very quick to 4 grade Celsius. The "mix " inside have this composition: 40 liter of laity 3,5 %,10 kg sugar,2 liter of whipping cream 32-35%,2 kg of base from a factory, special ingredient for ice cream. In the final of 90 minutes, you will have inside of pasteurization "base milk", you need this to produce milk ice cream: chocolate, vanilla, caramel etc.

To produce 1 case(5000 ml of ice-cream) with chocolate, you must mix in a special support : 3,5 x 100 grams essence of chocolate,+ 3,5 liter of base milk. You mix this and you put into freezer, push a button and in 15 minutes you have a case with chocolate.

Water ice cream. All fruits and all taste of fruits ice cream are made with water. You put 3,5 liter of water,+ 3,5 x 100 grams of essence fruit and after, put into freezer. In 10 minutes you will have a case with fruit ice cream.

All finish product must be very nice looking, and depose in special fridge, at -18 or -20 grade Celsius. Ventilated area, ventilated fridge.

2) How to sell, marketing and price.

It's a food area, so is very important how look the final product, where is expose, what taste you have on selling, what price. I recommend only 24 taste in case, maybe 4-5 taste more in traffic. About price: you must know your competition, your source of ingredient, you need a very good milk, a good price of sugar and a contract for ingredients. I recommend to you only Pregl or me 3.Both from Italy.

You need case polycarbonate or inbox, from Italy. Your lab must have about 40 gm. You will need some money: 11000 euro for a good pasteurisator,15000 euro for a good freezer,2500 euro for a Master fridge, 2000 euro for case polycarbonate or inbox, about 2000 euro for little things into laboratory. Water and current energy, I think 380 V and 220 V. And a case fridge for expose and sell the ice cream, maybe Isa gelato show 220 is ok, about 12-15000 euro.

If you buy Cantabria, you need a little more money; If you buy Frigate, it's ok all this money.

Your cost: about 2,5 euro for 1 kg fruit ice-cream. About 3,5 euro for 1 kg milk ice cream. This means 20 cups x 50 grams for each kg. if you sell with 1 euro/every cup of 50 grams, this means every kg of ice cream 20 euro at selling. Gross profit about 16 euro/kg. With good presentation, good mk, you can sell 10-25-35 kg every day! All I tell you is Italian style, artisanal gelato. Best from the world!
