How does it work?
The high-pressure oven requires a fixed water connection (feeding and emptying). As the water supply is permanent, the cooking time is therefore unlimited.
The same principle as with the low-pressure furnace, but here the generator, located outside the cavity of the furnace, pumps water directly on the drinking water network, heating it and transforming it into steam.
The steam is then injected into the furnace chamber and held there so that the internal pressure increases to about 2 bars.
The temperature will increase gradually in the oven (up to 120 ° C)
When the cooking is finished, the steam escapes through a specific circuit and the temperature goes down
In brief: A high-pressure furnace serves the functions of a low-pressure furnace + those suitable for high pressure.

The combi steamer cooks both steam (such as a 100% steam oven) and convection heat, grill or natural convection (like a conventional multifunction oven). This is the uncompromising solution because you will be able to cook everything: from the ultra-soft and mellow to the golden and crunchy.
NB: All combi ovens do not have the grill function (resistance placed on the floor or the vault), used for example to cook a steak or sausages, grill a gratin or toast. If this method of cooking interests you, look closely at the technical characteristics of the different models.
A steam combi oven will cost you more than a multipurpose oven or 100% steam oven but will be less expensive than buying two additional ovens.

Not to be confused with the combined steam oven, some models offer steam assistance (" Steam assist "). These ovens do not offer real steam cooking. It is rather a steam option or "humidification". During traditional cooking with hot air, a little water is injected into the cavity to humidify at the end of cooking. For that, one fills with water a small tank of a few centilitres. This will help to moisten our food to obtain a smoother result or soft.

Nothing to do with cooking, some conventional multifunction ovens offer a steam option (or hydrolysis) for cleaning the oven.
