Ingredients

2 Cups of spinach

 3-4 cups boiling salted water

 

Some grated ricotta cheese

 4 egg yolks

 Some grated Parmesan cheese

 Salt to taste

 ¼ tablespoon each of white pepper powder, nutmeg powder, cinnamon powder, and cloves      powder

 1 cup all-purpose flour

 

250 gms cups boiling water

4 Tablespoon unsalted butter

 

Preparation Method:

Chop off and discard stems of spinach. Wash it thoroughly under running water so all the mud and dirt is removed. Boil the washed spinach leaves in some salted water. When it cools down the drain in a colander. Blend the spinach in a mixer into a coarse paste without adding any water.

 

Take care not to add any water at this stage so that the firm balls are formed. In a bowl mix spinach, all-purpose flour shredded ricotta cheese, egg yolks, Parmesan cheese, salt, and all the spices powder. With gentle hands knead it into the dough.

 

Take a small portion of dough and turn it into small balls with floured palms. Likewise, make several balls using all the dough. Always keep your hands floured. In a vessel bring lightly salted water to a boil, then add the spinach balls one by one.

 

Do not add more than two or three balls at a time, to avoid the balls getting stuck or broken. Once the balls are done they will rise to the surface, take them out in a dish. Drain the excess water well. Place in a pan or a bowl spread Parmesan cheese on it, put a small dot of butter, and gently toss. Now again sprinkle some Parmesan cheese and serve to be savored.
